Carla is popular chef in Mexico City 🇲🇽, second to none besides her mother. Growing up, this is a challenge for her because her mother is versatile and skillful in the kitchen when creating all types of meals. Whether it’s the passed down skillet from her grandmother or her reliable utensils that make every meal come out right. Carla was looking to crown herself in the family as the best cook and defeat the consistent reminder that she can’t cook better than her mother. Destined to improve her cooking skills she immediately grabbed her recipe book. Carla viewed her family favorites and found an authentic Mexican quesadilla recipe. Destined to make the best chicken quesadilla recipe, she had to figure out a way to spice it up.

Mexican Quesadilla Recipe 🇲🇽 

Carla stunned because quesadillas are one of her favorite recipes to make. She has received numerous awards in cook off competitions for her Mexican Quesadilla Recipe. Most recently her award on the “Best Chicken Quesadilla” in the “Which Gender Can Cook Better” competition. Carla did a quick search for recipes that combined cultures, and she found KaribeTV. She was aware of Karibe due to her interest on African and Caribbean culture. After a thorough review, Carla is interested in the Jamaican chicken recipe. 🇯🇲 The seasoning and spices are a must have for every foodie and would be a great introduction for her in creating recipes in other cultures. 

Jamaican Style Quesadilla 🇯🇲 

With blending of Jamaica’s culture, Carla official named this recipe Jamaican style quesadilla and immediately added it to her recipe book. Carla immediately grabbed her kitchen tools and began creating her Caribbean quesadillas as she nicknamed it. Carla felt a sense of satisfaction as she knew this would be a great introduction to create more specialty dishes outside of her Mexican heritage. With a curious mind, she began looking into other recipes from Karibe and is impress with pepper shrimp and pepper steak. As you read this, Carla is looking into ways to recreate these recipes with a Mexican twist. 😂 

The Best Chicken Quesadilla 

After Carla finished cooking her Caribbean quesadillas, she proclaimed her recipe to be the best chicken quesadilla she ever had. With so much excitement Carla can’t wait to share the combination of Mexican and Jamaican cuisine. Before sharing it with the world, she immediately went to her biggest competitor, which is her mother. She disguised the quesadillas as a dish from a popular restaurant to make certain her mom wasn’t biased. As mom ate them, she stated that these were the best chicken quesadillas she ever had. Carla cut her off and informed her that she made them. Both laughed as mom recognized that the torch as the best cook in the family had been passed down to Carla.

Jerk Chicken Quesadillas Recipe 🇲🇽 

Our Jerk chicken quesadilla are a must. Adding a Jamaican touch to these Mexican quesadillas will make this your favorite recipe.
Course Appetizer

Equipment

  • Karibe Utensils Set
  • Karibe 10" Cast Iron Skillet
  • Karibe Cutting Board

Ingredients

  • 1 Pack Tortilla Wraps  
  • 4 Pieces Chicken Breast
  • ½ – 1 Cup Mexican four cheese or cheese of your choice 
  • 1 tbsp Mild or spicy jerk seasoning  
  • ½ Cup Sweet corn  
  • ½ Cup Red onion  
  • ½ Cup Bell pepper  
  • ½ – 1 tsp Parsley flakes  
  • ½ tsp Black pepper 
  • 1 ½ tsp Maggi all purpose seasoning
  • 1 – 2 Pinches Salt  
  • Oil  

Instructions

  • Dice into medium size onions and bell peppers, set aside.
  • Measure and set aside sweet corn and cheese of your choice.
  • Clean and season the chicken breast.
  • Set aside for at least 30 minutes before cooking. 
  • Add oil to your cast iron skillet and allow it to get hot, then add your chicken breast. Cook for 4-5 minutes on each side. (depending on the thickness)
  • Remove the chicken breast from the pan once fully cooked, set aside for 5 minutes then cut into chunks.
  • Add your tortilla to the skillet and allow to heat up (5-10 seconds), add your fillings to half of the tortilla wrap and fold in half. 
  • After a minute or until the cheese is melted, flip your wrap onto the other side and allow the cheese to melt. Remove from the skillet once the cheese is melted. 
  • Continue this process until you have your desired number of quesadillas.
  • Cut, serve and enjoy!

Ocean is a beautiful Dominican ?? woman who recently got married to a Jamaican ?? man this past year. To her delight she is happily married, found the man of her dreams and completely satisfied with the man she has said “YES” to! One dilemma she has is that neither herself nor her husband mastered the art of cooking. Disappointing because growing up cooking was one of the ways her mother displayed her love to her father. With a desire to impress her newfound love and develop the skill of cooking that she believes is her responsibility she thought of recipes they can enjoy. Coming to a slump she spoke with her husband of the challenges she was having, and he recommended the Kulture by Karibe.

After reviewing the recipe options, Ocean was excited because the focus was related to African and Caribbean Culture. Being that they are both islanders, she was definitely looking in the right place. As she continued her search, she fell in love with Jamaican style pepper shrimp. ? A couple of seafood lovers with a Caribbean island background made this Caribbean pepper shrimp a match made in heaven. ?

Caribbean Pepper Shrimp 

As ocean watched Caribbean pepper shrimp on KaribeTV, she was delighted that the focus was to have it prepared as Jamaican style pepper shrimp. ?? With a focus on her husband’s culture, she believed whatever cooking skills she lacked, this would make up for any challenges she may have. Continuing her lesson on KaribeTV, she noticed rasta pasta and that her husband was starting to live a Rastafarian lifestyle. She began to doubt that Caribbean pepper shrimp recipe. With a slight dilemma she asked her husband what his preference and he chose the classic shrimp recipe. ?With such a swift response and a focus on Jamaican style pepper shrimp, Ocean wanted to learn more about Jamaica’s connection to pepper shrimp. 

Jamaica’s Connection to Pepper Shrimp

Ocean called her friend Shannon, because Shannon is imbedded in Caribbean culture being that she grew up in New York. Shannon expressed to her that when it comes to shrimp recipes, pepper shrimp and curry shrimp are the must haves. With spicy pepper shrimp viewed as a delicacy in the island she dove more into the history of the recipe. With her ongoing education she found that the process of catching shrimp is using bamboo traps, which is believed to be a technique that was taught by enslaved west Africans. Satisfied with what Ocean has learned, she was ready to begin cooking, so she started to review the ingredients. 

Ingredients For Pepper Shrimp 

To her delight garlic, scotch bonnet peppers and more signature Caribbean ingredients made her smile. She immediately printed out her recipe card and tuned into her shrimp recipe on KaribeTV. After completing her dish, she called for her man to enjoy her amazing meal. With the expression on his face, he was truly pleased and dove into his plate.

Ingredients

  • 1 Ib Shrimp 
  • 2-3 Stalks Scallion 
  • 2 Cloves Garlic 
  • 1 Onion 
  • 14 Crushed Pimento Seeds 
  • 2-3 Scotch Bonnet Peppers 
  • 1 tsp Thyme Leaves
  • 1 tbsp Red Food Coloring 
  • 1 tsp Complete Seasoning  
  • 1 tbsp All Purpose Seasoning 
  • 1 Pinch Salt 
  • 2-3 tbsp Oil 
  • 1 tbsp Butter 

Instructions

  • Dice and set aside all seasonings.
  • Clean and rinse shrimp with vinegar and water or lime and water. 
  • Add powdered seasoning and fresh seasonings to shrimp, mix to combine and allow to marinate overnight or for 30 minutes the least. 
  • Heat oil, and add seasoned shrimp. Allow shrimp pieces to cook until they change color.
  • Add butter, some food coloring and about a 1/2 – 1 cup of water.
  • Allow to simmer. The total cook time is approx. 10-15 minutes. Check on your shrimp every 1-2 or 2-3 minutes until done. Add more food coloring or seasoning to your liking throughout the cooking process.
  • Once cooked, remove from heat and allow to cool for 10 – 15 minutes. SERVE & ENJOY!

Jessica, a beautiful young lady, has a great job opportunity in England that she could not pass up. Being born in Brooklyn, NY, this move is risk-taking as she has never traveled outside the country. With great excitement, she embraced her newfound home and wanted to learn more about the UK. Jessica is a well-known foodie in NY, and she loves to cook.

With her interest in her new home and her great foodie skills, she began to search for a few popular recipes. Upon her search, she found Karibe, a cookware company in the greater NY area. When reviewing KaribeTV, Jessica fell in love with the Caribbean style shepherd’s pie recipe.

The blending of English and Caribbean cuisine was a no brainer and a great transition for her to help adjust to her new home. Growing up in NY, Jessica was submerged in Caribbean culture. With so much excitement she continued her search for this delicious meat pie to learn its rich history.

History of Shepherd’s Pie 

To her surprise she was shocked to learn shepherd’s pie origin begins in Ireland and northern England. Based on who you are talking to in the UK it may also be known as cottage pie, but to Karibbeans it’s known as Caribbean casseroles. 

While continuing her search, Jessica learned that that cottage pie may have come to creation from leftovers. Foodies are truly creative to avoid waste. To her delight she was truly excited but was curious about what makes Karibe’s shepherd’s pie special. She began to ask herself what are the shepherd’s pie ingredients? How do you combine Caribbean ingredients with European cuisine? Can you maintain an authentic meat pie with the fusion that Karibe is providing?

Caribbean Style Shepherd’s Pie

Jessica printed Karibe’s recipe card and read through the sheet with great tenacity. She instantly fell in love ❤️ with the shepherd’s pie ingredients and Karibbean tips in creating this meat pie. The jerk spice was the secret ingredient as she knows that jerk chicken is signature dish in the Caribbean.

Jessica tuned into KaribeTV to make certain that she mastered the preparation as she was excited to recreate this recipe. The combination of Caribbean and English culture was on full display and was certain to help her adjust to her new home.

Caribbean Style Shepherd’s Pie

Enjoy the beautiful creation of English and Caribbean cuisine with our Caribbean style shepherd's pie. This meat is a must try!

Equipment

  • Karibe Utensils Set
  • Karibe Knives Set

Ingredients

  • 250 g Ground lamb
  • 2 Medium Onions (Diced)
  • 4 Cloves Garlic (Minced)
  • 1 Chili (Chopped)
  • 1 Cup Garden peas
  • 1 tbsp Tomato paste
  • 1 Cup Beef broth
  • 1 tbsp Paprika
  • 1 TSP Dried thyme
  • 1 tbsp Jerk spice

Instructions

  • Chop and dice all your vegetables.
  • Place the ground lamb in your pan, stir and cook the meat until it’s browned and set aside.
  • Add some chili oil to your pan and sautĂŠ your onions until they’re translucent and add in your diced peppers and minced garlic.
  • Cook for 2 minutes and add in garden peas.
  • Stir in 1 tbsp tomato paste and add in the seasonings; 1 tbsp jerk spice, 1 tbsp paprika and 1 tsp dried thyme.
  • Add the beef broth, letit cook for 5 minutes and add in the browned ground lamb.
  • Reduce the heat and leave it to simmer down for 15 minutes or until thickened.
  • Peel and chop some potatoes.
  • Thoroughly wash to remove all dirt.
  • Boil until they are soft and drain the water.
  • Preheat your oven to 180C.
  • Add in butter, heavy cream, black pepper, thyme and parsley.
  • Mash and add in cheese half way through.
  • Continue to mash until smooth.
  • Pour the meat mixture into your casserole and top them up with the creamy cheesy mash.
  • Bake for 15 minutes until the potatoes are golden.
  • Serve and enjoy!

Tamika, a beautiful woman from New Jersey met a man that swept her off her feet. They had been dating for a few months and she wanted to do something special for him. Tamika being the great cook that she is recognized the power of cooking with love. The challenge is her man is Rastafarian and she did not know much about the culture. The only insight of the rasta lifestyle she is familiar with are the experiences they shared together. In her eyes Rastafarian men are picky eaters. ?? Eager to impress she immediately began her search.

Upon her search she found KaribeTV’s Rasta Pasta. With great delight she found it to be a delightful Jamaican 🇯🇲 pasta dish. Prior to diving headfirst into the recipe, she thought it would be great to learn more about the culture. With Karibe being a source for African and Caribbean culture, she would not have any doubt in strengthening her connection with the love of her life. In a quick search, she found a variety of different type of rasta diets from plant based 🌱 to pescatarian 🐟, but not pork 🐷. Eager to impress, she looked more into Karibe’s Caribbean pasta. 🍝 

What is Rasta Pasta? 

While Tamika continued to review the recipe sheet. She viewed rasta pasta as Jamaican pasta that add some of the best touches of Caribbean seasoning and spices such as garlic, jerk seasoning, and bell peppers to name a few. Being the foodie that she is, Tamika had to add her own touches to her Jamaican pasta. Afterall since her man is a picky eater, she wanted to make sure she enjoyed the meal as well. ? 

Caribbean Pasta 

To make this recipe her own, she decided to add shrimp and chicken. A hearty pasta will be sure to impress her new love. In all actuality who can resist Italian ?? cuisine with a touch of Karibbean Kulture. As she prepares her shrimp and chicken pasta she vowed to investigate into more Rastafarian recipes and learn more about their diet. 

Rastafarian Diet… 

As Tamika finished her rasta pasta, she looked more into the Rastafarian Diet. To her disappointment ? she recognized that the Rastafarian diet is primarily plant based. ? It varies as others who practice in the community will engage in a pescatarian diet as well. ? It is believed to eat natural food that is provided from the earth which will increase their bond to nature while improving physical, mental, and spiritual health. Being an obstinate woman that she is, Tamika was determined to follow through and share with her new love. 

Caribbean Rasta Pasta 

It turns out that Tamika’s shrimp and chicken pasta was a success. Although he removed his diet restriction for her on this occasion, he enjoyed the meal. He was more impressed that she took the time to learn his culture. Thanks to her effort, it was a start to an everlasting love between them. Then again who can resist pasta with a Caribbean twist? ?

Ingredients

To Season Chicken & Shrimp

  • 1 Ib Chicken Breast
  • 18 Pieces Medium/Large Shrimp
  • Âź tsp Old Bay Seasoning
  • ½ tsp All Purpose Seasoning
  • ½ tsp Complete Seasoning
  • 1 tbsp Mild/Spice Jerk Seasoning
  • Pinch of Salt

Pasta Sauce

  • 1 tbsp Butter
  • 2 cups Evaporated Milk
  • ⅓ cup Shredded Mozzarella
  • ⅓ cup Parmesan Cheese
  • 2 cloves Minced Garlic
  • ½ Medium Onion
  • ½ Red, Yellow, and Green, Medium/Large Bell Pepper
  • ½ tsp All Purpose Seasoning
  • Âź tsp Black Pepper
  • Pinch of Salt

To Cook Pasta

  • 1½-2 cups Pasta
  • 3-4 cups Water
  • ½ tsp Salt
  • 1 tbsp Oil

Instructions

Pre-Prep

  • Clean, and peel shrimp (devein if needed), season, and set aside to marinate for 30 minutes or overnight. 
  • Clean and cut chicken breast into slices, season, and leave to marinate for 30 minutes or overnight.
  • Cut half of each bell pepper into medium strips. 
  • Finely dice onion and garlic.

Time to Cook

  • Add water to a pot, with oil and salt, and allow it to come to a boil. Add pasta and cook according to the directions on the package. Once cooked, strain and set aside.
  • Add a tbsp of oil to cast iron skillet, and saute bell peppers for 1-2 minutes on medium-low heat. Remove, and set aside. 
  • Add and saute chicken breast for 2-4 minutes on each side. Remove, cut into thin slices, and set aside. 
  • Add and saute shrimp for 1-2 minutes on each side. Remove and set aside. 
  • Wash and rinse the skillet, and on low to medium heat, add butter and allow it to melt.
  • Add and saute minced garlic and onion for 1-2 minutes.   
  • Add evaporated milk, stir, and allow to come to a boil. Add jerk seasoning, black pepper, all-purpose seasoning, and a pinch of salt. Stir.
  • Add mozzarella and parmesan cheese, and simmer for 1-2 minutes. 
  • Add bell peppers, pasta, shrimp, and chicken. Combine until all ingredients are coated in the sauce. 
  • Remove from heat, sprinkle parmesan on top, serve, and enjoy!

Shang recently moved to Atlanta, GA and wanted to introduce a Chinese BBQ restaurant. Her fellow foodies of the empire state of the south will appreciate her creativity. She recently tried this venture up north but considered it will be more of a success down south. Shang was a little nervous because she considered her recipes to be plain. Destined for success she knew she had to spice things up to compete with all the great restaurants in Atlanta. Shang searched for “Chinese BBQ” and found Caribbean style char siu on KaribeTV.

? Skeptical of the recipe, she decided to do more research on Karibe. It appears that Karibe focuses on blending African and Caribbean recipes with other cultures. ? With immense delight Shang was eager to recreate this Chinese pork recipe and add it to the menu of her new restaurant. 

Chinese BBQ 

After a thorough review of BBQ tips, she was certain to be a success and became more confident. As Chinese BBQ to be her forte to attract customers, it would be perfect to consider Karibe’s char siu as her signature plate ?️. After getting fully settled in Georgia, Shang eagerly dove into the recipe to learn how to make Char Siu. 

How To Make Char Siu?

To give her new patrons the true satisfaction of this Chinese pork recipe, she realized that she had to perfect the marinade. The basting process was vital as well as the ingredients used. This would potentially allow her to have the best BBQ restaurant in Georgia. When recreating her marinade, Shang printed out the recipe card and had KaribeTV on repeat. Bound certain for success she was attentive to each key ingredient. 

Char Siu Sauce 

The combination of Chinese and Caribbean spices and sauce made this recipe to die for. ? Hoisin sauce, Chinese five spice, and jerk paste was obviously a creation of a foodie scientist. With a few iterations and having local friends try her plate she was confident and ready to launch her new restaurant. 

Caribbean Style Char Siu 

On opening day, Shang’s No.1 China BBQ was a success with the feature recipe being char siu. ?Excited by her new level of success with a spontaneous move to Atlanta, it turned to be a great decision. Caribbean Style Char Siu 🇨🇳

Recreate our Caribbean style char siu. Our Chinese pork recipe is a must try.

Equipment

Ingredients

Marinade

  • 1 tbsp Hoisin Sauce
  • ½ tbsp Chinese Five Spice
  • 1 tbsp Brown Sugar
  • 1 tbsp Preferred Homemade Mixed Spice
  • 1 tbsp Jerk Paste
  • 1½ tbsp Dark Soy Sauce
  • 1 tbsp Vegetable Oil
  • 1 tsp Red Food Coloring

Basting Marinade

  • Leftover Marinade
  • 1 tbsp Honey
  • 1 tbsp Oil
  • ½ tbsp Jerk Seasoning

Instructions

Preparation

  • Mix all the ingredients for the marinade in a bowl and save ⅓ for use later.
  • Place the pork in Ziplock bag and pour the marinade on it. Make sure to mix it well in the bag and allow it to marinate for at least 24hrs in the fridge.
  • When you’re done marinating, preheat oven to 180C.
  • Line a tray with foil and place a rack on top. Remove pork and place them gently on the rack.
  • Add a bit of water to the tray to avoid burning and roast for 25 minutes.
  • Remember the ⅓ marinade saved earlier, add 1tbsp jerk spice, 1 tbsp honey & 1 tbsp oil, mix and set aside.
  • Check pork after 25 mins, remove and baste with the new marinade on both sides.
  • Place it back in the oven and roast for additional 15 minutes until sticky to touch.
  • Remove from the oven and allow it to rest for about 5-10 minutes before slicing
  • Serve as desired and enjoy.

Nikki recently moved from China to Florida with her family and was beginning to feel homesick. Coming from a multicultural family as her father is Chinese and her mother is Jamaican, she questions how life would be living in the states. Fortunately, she has an outgoing sister named Domonique.

As you know, Domonique had an adventure in making Jamaican Fried Dumplings. Domonique recommends that Nikki review the kulture as it does an amazing job in blending African and Caribbean recipes. Nikki followed her sisters’ footsteps and reviewed KaribeTV. After her review, she was intrigued to recreate Caribbean style pepper steak.

This is exactly what Nikki needed after feeling homesick as Chinese pepper steak is a popular dish in China, and she was excited try this recipe for herself. 

How Do You Make Pepper Steak? 

For Nikki, making this recipe would not be a problem because this is her favorite as she was growing up as a young girl. To her it is a traditional stir fry steak invented by Chinese foodies. With such excitement Nikki grabbed Domonique and thanked her for informing her about Karibe. With so much joy, Nikki insisted that they prepare the meal together and use the time as a bonding moment in their new home. Domonique obliged and asked Nikki to print out the recipe card. They were both curious about Caribbean style pepper steak and how it may differ from traditional Chinese stir fry steak.  

Chinese Stir Fry Steak 

Nikki immediately asked herself what are the ingredients? Nikki is aware of how to make Chinese pepper steak, but what is the difference in Karibe’s Caribbean style pepper steak? Diving deeper into the recipe she noticed a strong touch of Caribbean flavor with the blending of garlic, adobo, scotch bonnet pepper and a touch of thyme. Karibe’s pepper steak ingredients added a nice twist to Chinese pepper steak. She now understood why Karibe is one of the sources for African and Caribbean culture

Ingredients

  • 1 Ib Beef steak 
  • 3 Bell peppers Red, green, orange 1/4 of each color
  • 3 Garlic cloves
  • 5 tbsp Mushroom soy sauce
  • 2 tbsp Black pepper
  • ½ Cup Ketchup
  • 3 tbsp Complete seasoning 
  • 3 tbsp Adobo
  • 1 tbsp Jerk sauce
  • 1 tbsp Green seasoning
  • 1 tsp Red pepper flakes Optional
  • 1 Scotch bonnet pepper Optional
  • Âź Cup Green onions Finely diced
  • 3 stems Thyme
  • 2 tbsp Vegetable oil
  • Salt to taste

Instructions

Step 1: Prepare the Ingredients 

  • Slice the beef into thin strips against the grain. (Or get the already chopped pepper steak at the supermarket)
  • Thinly slice the bell peppers, green onions and onion.
  • Mince the garlic cloves.

Step 2: Marinate the Beef 

  • To a bowl add the beef strips mushroom soy sauce, black pepper, complete seasoning, adobo, jerk sauce and green seasoning. Toss until well coated.
  • Let the beef marinate for at least 15 minutes to allow the flavors to infuse. Overnight for maximum flavor.

Step 3: Cook the Pepper Steak 

  • Heat the vegetable oil in a large skillet or wok over high heat.
  • Add the marinated beef and stir-fry for 2-3 minutes until browned. 
  • Remove the beef and juices from the skillet and set it aside.

Step 4: SautÊ the Vegetables 

  • In the same skillet, add a little more oil if needed.
  • Add the sliced bell peppers and onion to the skillet and stir-fry for 2-3 minutes until they start to soften but still retain their crispness.
  • Season the vegetables with a pinch of salt and pepper.

Step 5: Combine and Simmer 

  • Return the cooked beef and juices to the skillet with the vegetables.
  • Pour in 1/4 cup of water and add ketchup. Stir everything together.
  • Bring the mixture to a boil and let it simmer for a few minutes until the sauce thickens slightly.

Step 6: Serve and Enjoy 

  • Taste the pepper steak and adjust the seasoning if needed.
  • Serve the pepper steak hot over steamed rice or noodles.
  • Garnish with chopped green onions or sesame seeds for added flavor and presentation.

Fabien is a beautiful woman from Port- au- Prince Haiti ?? who recently moved to Paris and was beginning to feel home sick. Although she is happy to be living in France and grateful for the opportunities afforded to her, she was not satisfied with the French cuisine. She enjoyed the meals but was missing the connection to Haiti. While living in France, she started to form solid friendships and asked what she should do to solve her dilemma? Her friends who also migrated to France recommended that she should blend cultures and directed Fabien to KaribeTV. Upon her search she found many recipes highlighting African and Caribbean culture, but Caribbean style fricassee chicken stood out for her. The origin of fricassee chicken grabbed her attention because it is a popular dish in France ??.

Fabien became excited because this recipe was a fusion between French and Caribbean cuisine. In her eyes she viewed the recipe as Caribbean fricassee chicken. As she reviewed the recipe, she realized that it is a hearty French stew chicken recipe. Fabien immediately had flashbacks in Haiti eating Bouyon Bef. With her new discovery of Karibe, her connection to Haitian cuisine while living in France was salvaged. Fabien grabbed her cookware and dived deeper into the recipe to learn how to make chicken fricassee. 

How To Make Chicken Fricassee 

While reviewing her newfound French stew chicken, she was amazed with the ingredients. Garlic, scotch bonnet pepper and oddly enough a touch of sugar. With so much excitement, Fabien added her Caribbean fricassee chicken to her YouTube playlist and watched with so much intent to make certain she did not miss any steps. Fabien is a perfectionist and would have been disappointed if she was not able to recreate this recipe. As she became confident of the recipe, she was curious about the history of fricassee chicken and wanted to know if there was any connection to the Caribbean. 

Origin of Fricassee Chicken 

Fabien researched the history of fricassee chicken and found that it is a popular recipe in France. The recipe dates to medieval times found in the French cookbook Le Viandier circa 1300. As she continued her search, she learned a fun fact that fricassee is a stew made with meat browned in butter and then served in a sauce with the related cooking stock. Being satisfied with her history lesson, Fabien began cooking. 

French Stew Chicken 

As Fabien completed her French stew chicken she was pleased with the outcome. She laid her chicken over Haitian black rice ?? and enjoyed her meal. Thanks to Karibe, France was beginning to feel like home.

Caribbean Fricassee Chicken

Caribbean Style Fricassee Chicken ??

Equipment

  • Karibe Utensil Set

Ingredients

  • Chicken Wings 
  • 1 Lemon To clean chicken 
  • Âź cup White vinegar  
  • 5 tbsp Complete seasoning 2 tbsp to season water 
  • 2 tbsp Green seasoning 
  • 5 tbsp Adobo 2 tbsp to season water 
  • 3 tbsp Garlic powder 
  • 3 tbsp Paprika 
  • 1 tbsp Onion powder 
  • 8 tbsp Mushroom sauce 
  • 6 Pimento berries Crushed
  • Âź cup Oil 
  • 1 Onion  
  • 3 Garlic cloves  
  • 1 Green bell pepper  
  • 3 Scallions Chopped 
  • ½ cup Ketchup or more if needed 
  • Âź cup Sugar to taste 
  • 1 tsp Thyme 
  • 1 tsp Black pepper 
  • 1 Scotch bonnet pepper  
  • 1 Large Irish potato  
  • Salt to taste 

Instructions

  • Wash and season the wings with dry seasonings listed above then Marinade overnight or at least 1 hour. 
  • Heat a deep pot on medium-high heat, add oil, when hot, add chicken wings and brown on each side. 
  • Remove pieces from the pot as they brown. Remove some of the oil to sautĂŠ the aromatics.  
  • Add the onion, garlic, and sweet pepper, scallions, thyme, crushed pimento berries, scotch bonnet pepper, to the skillet. Cook for 5-7 minutes or until the vegetables are fragrant and translucent. 
  • In the bowl you seasoned the chicken, add about 3-4 cups of water and mix it around to get off excess seasoning in the bowl or you can use chicken broth.  
  • Pour it in the pot and add 3 tbsp of mushroom sauce, sugar, ketchup, and season with black pepper, salt, and complete seasoning. Stir to combine. 
  • Place the chicken in the pot. Bring the mixture to a boil. 
  • Reduce the heat to low and let the mixture simmer for 35-40 minutes or until the chicken is cooked through and the sauce has thickened. (At the 25-minute mark add your potatoes)

How to Make Brown Stew Fish 

Growing up in New York, Shannon has always gravitated toward Caribbean culture. It only made sense that she would search for Caribbean style seafood related cuisine.   • 2-4 Whole Firm white fish (such as red snapper or grouper)
  • 5 tbsp Complete seasoning
  • 3 tbsp Adobo all-purpose 
  • 1 tsp Salt (To Taste)
  • 5 tbsp Black pepper
  • 3 tbsp Paprika
  • 1 tbsp Red pepper flakes 

Flavor Oil  

  • Âź Cup Vegetable oil
  • 3 Cloves Garlic Crushed
  • 7 Pimento berries 
  • 1 Scotch bonnet pepper
  • 3 Stalks Fresh thyme

Brown Stew Sauce Ingredients  

  • 1 Onion Sliced
  • 3 Bell peppers (one green, yellow, and one red) Sliced
  • 3 Cloves Garlic Minced
  • 2 Tomatoes Chopped
  • 3 tbsp Mushroom sauce
  • Âź Cup Ketchup
  • Fresh thyme
  • 2 Scallions Chopped
  • Salt and Pepper (To Taste)
  • Âź Cup Sugar (Any Sugar)
  • Scotch bonnet pepper 

Instructions

Prepare the Fish

  • Place fish in a bowl of cold water, vinegar, and 1 squeezed lime.
  • Rinse the fish fillets under cold water and pat them dry with a paper towel.
  • In a shallow dish, combine the seasons, salt, black pepper, and paprika, complete and adobo. (leave 2 tbsp back) 
  • Make a slit on both sides of each fish. Cut the slits as an X to make sure the fish doesn't break. (see video)  
  • Season the fish, making sure to coat both inside the fish and in the slit cuts on the fish.

Fry the Fish

  • In a large skillet, heat the vegetable oil over medium-high heat.
  • Add thyme, scotch bonnet, pimento berries, and garlic to flavor the oil.
  • Once the oil is hot, carefully place the fish into the skillet, ensuring they don't overcrowd.
  • Fry the fish for about 4-5 minutes on each side until they turn golden brown.
  • Remove the fish from the skillet and set them aside on a paper towel-lined plate to drain excess oil.

Prepare the Brown Stew Sauce

  • In the same skillet (or off some oil), add the sliced onions and bell peppers. SautĂŠ them until they become tender and lightly caramelized. 
  • Add the minced garlic, scallion, fresh thyme, and scotch bonnet and cook for an additional minute. 
  • Place 5 cups of water, ketchup, mushroom sauce, and sugar, and bring the mixture to a simmer.

Simmer and Serve

  • Carefully place the fried fish fillets back into the skillet, ensuring they are submerged in the sauce.
  • Reduce the heat to low, cover the skillet, and let the fish simmer in the sauce for about 10-15 minutes, or until the fish is cooked through and flaky.
  • Adjust the seasoning with salt and pepper according to your taste.
  • Serve the Jamaican Brown Stew Fish hot with steamed rice or your favorite side dish.

In the upcoming days it will be a fun-filled weekend in Bayonne with the honoring of Juneteenth and Patricia wanted to contribute to the festivities. Patricia is beautiful, super model –esque 💃 from Kenyan 🇰🇪 and Tanzanian 🇹🇿 parents and she wanted to input her kulture into the festivities. She is known in the city as a great cook, so it is only right for this jovial holiday that she shows off her cooking skills. The challenge here is that Patricia never cooked for a large group, and she didn’t want to risk her reputation in preparing a meal that no one would enjoy. 

Patricia immediately searched for easy African recipes, and she found Karibe’s Kenyan Beef Pilau on KaribeTV. Patricia was ecstatic, because she had been told that she knows how to make a good pilau. It helps that she is Kenyan because east African pilau is known as the best pilau dish. 

East African Pilau 

In east Africa, this beautiful recipe has many names, such as Swahili Pilau, East African Pilau and obviously Kenyan Pilau. What makes this hearty rice a hit is the mouthwatering mix of beef and potatoes on one plate. Patricia prints out the recipe sheet from Karibe and reviews the ingredients and instructions. She wanted to be certain not to make a mistake as this would be her first-time cooking for a large group. The ingredients provided great spices and of course that special touch of garlic.

As Patricia prepares her Swahili rice as her sister would call it, she begins to think of all the lovely meals that will complement her dish. Jamaican Oxtails and curry chicken were the first recipes that came to her mind. A nice blend of African and Caribbean Culture for Juneteenth. It would also be a great opportunity to educate the youth on the history, how to make a good Pilau, and why Karibe is a good reference on how to make the best pilau dish.  

Swahili Pilau 

She can start by answering the most common question. What is pilau? Pilau is a zesty rice cooked with a potato and your choice of meat such as beef ? or chicken ? in beef or chicken broth. Then she will go in more depth regarding the geographical regions. Such as pilau being commonly eaten in the Swahili coast countries like Kenya ??, Tanzania ??, Uganda ??, and Mozambique ?? to just name a few. A smile came to Patricia face as she was looking forward to sharing her dish. 

Kenyan Beef Pilau 

By the time it was Juneteenth, Patricia was capable of overcoming her fear of cooking for a large group. The rice turned out perfect and everyone enjoyed it along with the history lesson that was provided. ?Being that this is her first-time cooking for a larger crowd, and it was a success, she thought, maybe Kenyans do make the best pilau dish. ?

Kenyan Beef Pilau 🇰🇪

Ingredients

Pilau Masala Ingredient

  • ½ tsp Ground Cumin
  • ½ tsp Black Peppercorn
  • 1 tsp Ground Cardamom
  • 1 tsp Black Pepper
  • ½ tsp Cloves

Ingerdients

  • 2 Cups Basmati Rice Rinsed and Drained
  • ⅓ Cup Vegetable Oil
  • 3 Large Onion Sliced
  • 3 Cloves Garlic Minced
  • 1 Chili Pepper Chopped
  • Thumb Size Ginger Minced
  • 1 Ib Beef Diced
  • 1 tsp Pilau Masala
  • ½ Can Tomatoes Chopped
  • 2 Medium Potatoes Diced
  • 2 Cups Water
  • 1 Sprig Rosemary
  • 1 Sprig Thyme
  • Cilantro Chopped
  • 1 tsp Salt
  • 1 Cube Bouillon
  • 2 Cups Basmati Rice

Instructions

  • Toast all the spices and grind to a powder. The recipe makes extra spice that you can keep for future use.
  • In a large pot over low-medium heat and add the oil and onions. SautĂŠ for 10 minutes, until the onions are caramelized into a dark brown color.
  • Add the minced garlic & ginger together with the chili and cook for 2 minutes to extract all the flavors.
  • Add the beef and toss for 2 minutes, followed with the pilau masala spice prepared earlier and start browning the beef.
  • Once beef is tender, add in the chopped tomatoes and let it cook for about 5 minutes or until it releases its juices and begins to thicken after which you can then stir in the potatoes.
  • Add water, toss in the cilantro, rosemary, thyme, salt & bouillon cube and bring everything to simmer for about 5 minutes.
  • Stir in the rice then cover and leave to cook on low heat for 25 minutes until the liquid has been absorbed.
  • Serve and garnish as desired! Enjoy

TIPS
  • You can use any aromatics that contain all the pilau masala ingredients.
  • You can use an aluminum foil to cover to trap in more steam.

Tashianna recently moved from New Jersey to Nottingham, UK with her husband and she experienced a culture shock upon living in England ???????. Her biggest struggle upon adjusting was embracing the food. The fish ? and chips ? were nice upon arrival, but she wanted something wholesome that would pack a nice punch in her stomach like the Caribbean recipes she has grown up with. Tashi searched for English recipes and stumbled upon roast beef. She recalled this was her husband’s favorite and she wanted to cook for him. Although, she is not familiar with the recipe, she searched, “how to make roast beef”?

Fortunately, for Tashi KaribeTV had a video on making Caribbean style roast beef. At first glance she felt that the recipe may be too much as she currently live with her husband. Using her foodie skills, she assured herself that the leftovers can be used to make a roast beef sandwich. What made this recipe special is that it showed how to make it in the oven. The weather in England can be fickle throughout the day, so Karibe’s recipe was a must try.  

Caribbean Style Roast Beef

This recipe is more involved as, its seasonings consist of traditional Caribbean ingredients, such as garlic, allspice, browning, and thyme. Tashi was eager to try Karibe’s recipe, because compared to the other food she has been eating in England, everything tasted a little bland. She now understood the Karibbean way of cooking Caribbean style roast beef. 

Roast Beef in The Oven 

Tashi immediately turns on her oven and prints out Karibe’s roast beef recipe while loading up Caribbean Style Roast Beef. Normally foodies follow the printed instructions or watch the recipe in action. Let’s just assume she wanted to perfect this recipe. ? As she seasoned her beef and placed it in the oven, a smile came to her face. Her kitchen simulated the smell that she was used to when her mother would cook.

As she followed through with completing her meal, she promised herself that she would experiment with other English recipes with a touch of Karibbean style of cooking. She started to appreciate her new home more and now was considering herself to be a proper English woman.  

Roast Beef Recipe

Caribbean Style Roast Beef Recipe ??

Ingredients

  • 3 Ib Chuck Roast
  • 1 Large Onion
  • 8 Spring Green Onion
  • Thyme (Use Your Discretion)
  • 8 Cloves Garlic
  • 1Âź tsp Sea Salt
  • 1 tsp Ground Allspice
  • 1 tsp Paprika
  • ½ tsp Black Pepper
  • ½ tsp Coriander
  • ½ tsp Garlic Powder
  • ½ tsp Onion Powder
  • ½ tsp Browning
  • 1-2 tbsp Oil
  • 1-2 Cups Chicken or Beef Stock

Instructions

Marinating

  • Chop 1/2 onion, 4 scallion, 6 garlic cloves, thyme, and set aside.
  • In a small bowl, combine salt, pepper, allspice, paprika, coriander, onion, and
    garlic powder.
  • In a bowl, pat dry chuck roast and generously season the roast. (3/4 of the
    seasoning mix)
  • Combine the remaining seasoning mix with the chopped aromatics and stuff the
    roast.
  • Cover with cling wrap and let marinate overnight in the refrigerator for best
    results.

Time to Cook

  • Remove your roast from refrigerator and allow to come room temperature.
  • Preheat oven to 375.
  • Chop remaining fresh aromatics and set aside.
  • To an oven-safe pot, add oil and sear the roast on the sides. (1-2 mins per side)
  • Transfer the roast back to the bowl and set aside.
  • To that same pot, add chopped aromatics (and oil if needed) and saute for 1-2
    minutes before adding the stock.
  • Allow to the stock to come to a boil before adding the roast to the pot.
  • Cover and bake at 375 for 3 hours or until tender. You can rotate your roast every
    30-45 minutes.

Gravy

  • Remove roast and let it rest.
  • Skim the excess oil from the roast dripping.
  • Taste and adjust if necessary.
  • Allow the mixture to come to a simmer.
  • Add water if needed and a cornstarch mix and simmer for a minute.
  • Sliced roast and serve with your favorite sides.

  • For an easy stock, you can dissolve 12g of beef or chicken bouillon cube in 2 cups of hot water.
